My Pickled onions

I love to have pickled onions so today i decided to make some. So here is what I made for myself 
Pickled Onions


This is what i like about it. It is one of the most simples things to do. And it adds that little zest to the food. 
You chop the onions and then soak in worm water for a minute and then drain. set aside. 

Then you make the brine for pickling the onion
1 cup white vinegar
1/2 cup apple vinegar
1 cup water
1/2 cup sugar
3 TBS salt
2 TBS white/brown mustard seeds
1/2 teaspoon cloves
1/2 teaspoon whole black pepper
1/4 teaspoon cinnamon stick
  1. In a pot mix both the vinegars
  2. add the salt, sugar 
  3. put the pot on gas at high flame and stir
  4. add water and stir
  5. add mustard seeds, cinnamon sticks, cloves and black pepper. bring to boil. 
  6. once it start boiling lower to medium heat and let it simmer for 5-10 minutes till all the sugars and salt are dissolved
  7. In jars add the onions
  8. Then pour the brine solution till it covers the onions completely
  9. Once it cools refrigerate for at least 4 hrs. 
Enjoy this as accompaniment to any meal or in burgers
This same brine can used pickle any vegetable like cucumbers, gerkhin etc
