Zucchini Rolls

Ingredients
  1. 1 Zucchini sliced lengthwise
  2. 2 bellpers chopped
  3. Mushrooms chopped
  4. Spinach 200 gms chopped
  5. 2 tbsp black bean sauce
  6. salt to taste
  7. 1/2 tsp ginger crushed
  8. 1/4 teaspoon black pepper
  9. 5 tbsp oil
 Directions

  1. Slice the zucchini end to end 3 mm thick
  2. Dip in boiling water for 4 min and then remove and put in cold water
  3. In pan heat half the oil
  4. Add the ginger and saute for a bit. 
  5. Add the peppers and Spinach and cook 
  6. As the peppers soften add the mushroom and stir fry . 
  7. After a minute add the black bean sauce, salt, honey, black peepr and stir the mixture. 
  8. Let it cook for a while till the vegetables soften
  9. Take a strip of Zucchini. spoon in the mixture of vegetables, and then roll the zucchini like shown in the picture. put a toothpick to hold the zucchini together. 
  10. Put all the zucchini rolls in a pan and brush with oil. Cook for 5 minutes on slow flame or till the zucchini is fully cooked.
